There's a chill in the air and Winter seems to be on the way. Suddenly salads don't look that appealing. This soup is a great way of getting in those veggies plus everything is Paleo!
BUTTERNUT SOUP
Ingredients:
1 butternut
1 can coconut milk
Any herbs (for taste)
Instructions:
- Cook butternut. Place into a saucepan and add about 3/4 of the can of coconut milk.
- Start mashing the butternut with a potato masher or use a blender.
- Once everything is mashed adjust the consistency by adding the rest of the coconut milk.
- You could add some nutmeg, ginger or garlic for taste. Garnish with herbs.
CAULIFLOWER BREADSTICKS
Ingredients:
1 Large cauliflower
garlic
1 egg (lightly beaten)
1 tsp herbs
Instructions:
- Preheat oven to 180 degrees and spray a bread tin or muffin tin.
- "Rice" the cauliflower by either grating or blitzing, microwave for about 6 mins (don’t add water).
- Mix garlic and egg with the cauliflower and then spread out in the bread tin.
- Bake for about 30 mins, then flip the loaf and bake for a further 10 mins.
